Coconut Macaroons

Well my intention was to show you some gorgeous Coconut Macaroons (American style). The last time I made these, it was super easy, but I couldn't remember what recipe I used. After comparing my cookbooks to the internet, I noticed there are so many variances. Some didn't have the cream of tarter and almond extract that I prefer. While others had condensed milk and cake flour.

I ended up using THIS RECIPE on Cooks.com.

But three things went wrong, and as most of you know in baking, there is no room for error. But they still tasted delicious. They just looked like... maybe they needed some flour. (The recipe didn't call for any.)
1.  I usually half recipes because I'm generally the only one eating what I bake... hence I don't want to get fat.
   (I think I forgot to half the 2nd egg white. Oops.
2.  I may not have let the egg whites, cream of tarter, and salt stiffen enough when beating; although I think it may have been too liquidy from that extra 1/2 egg white.
3.  We ran out of foil while barbecuing last night, so I used parchment paper instead. Oops again, it stuck to the paper.
4.  I was too eager to try them, that I forgot to let them cool. Oops.
I guess that makes it four things that went wrong.




Although, they didn't look like they were be supposed to, they still tasted great. There is something so comforting about the scent of almond extract and coconut wafting through the air as it bakes in the oven.
