Banana Chocolate Chip Muffins

Weekend Brunch





One of my life long dreams is to own a bed and breakfast...or bread & rest as we call them in my house. (Read more about this HERE.) So, occasionally on the weekends I love to experiment with recipes that are either unique, hearty, or comforting. I think this combination covered it all.

Banana Chocolate Chip Muffins

1 1/2 cups of flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 ripened bananas
3/4 cup sugar
1 egg
1/2 cup butter, melted
1/4 cup mini semi-sweet chocolate chips

Combine dry ingredients in a bowl. In a large bowl, smash bananas with fork, add egg, melted butter, and sugar. Mix well. Add dry ingredients gradually. Fold in chocolate chips. Bake for 18-20 min on 375. If using a dark coasted muffin pan like I did with no muffin liner, spray muffin pan and bake at 350 for 16-18 min.
