Little Herb Garden

Good Eats Wednesday


I've started my indoor container garden this week, and have been enjoying the addition of lots of fresh herbs in my meals. Not to mention, I light candles in the evening and turn it into a little evening Zen garden.

Garden Party

A Little Romance


I've been dying to do a food photo shoot outside, since we usually eat inside and our lighting is so poor indoors, and I'm usually just in a hurry to eat. So today, I decided to hold the shoot with appetizers and a glass of much needed wine with some gorgeous fresh roses. It was so much fun getting the set ready, and not to mention enjoying the pretty mini bites afterward.










Featured: Barefoot Pinot Noir wine. Water crackers, herb goat cheese, prosciutto, and fresh tarragon. Oh yes, and the little sack is Herbs de Provence, from non other than France.

Garden Dreams

who could ask for a better 4th of July?

Well MY attention was focused on this charming garden,
it was everything I craved this spring!

Bike Rides & Mansions

Meet my evening companion in South Carolina.
We've encountered a baby fawn and it's mother,
wild bunnies, egrets,  red cardinals,
and many squirrels on Lady's Island.

Oh... an way too many mosquitos...
It looks as if I might have chicken pox.










And strolling through town gazing up at the old
antebellum homes...







and sneaking peaks of quaint little gardens...




I think I may have found my new home...
it's only about $3.5 million.

Good Eats Wednesday

Veggies, Greens & Being Resourceful













In celebration of summer, swimsuit season,
eating locally, cutting back on meat,
and never really wanting to see another chicken breast ever again,
I've been inclined to eat more fruits and veggies.

This helps on the grocery bill and the waist line.
I hit the produce aisle first so I fill up my cart right away
with fruits and veggies, remembering to incorporate color
in each meal knowing I'm getting natural vitamins.
I also prefer to keep the veggies slighlty undercooked - al dente
which also holds the nutrients better.

I've even been saving the seeds in hopes of a fruitful garden.
Seeds shown are from the green pepper,
an orange bell pepper featured in many of last week's Summer Bites,
and a palm seed perished from our courtyard.
I even planted a Georgia peach pit last week in my window
to test my green thumb.

It really is a wonder how something so small can turn into something beautiful
and provide a hopefully bountiful crop
like my father's garden below...



He's already picked 24 squash from his Tennesse garden...

Stuffed Bell Pepper
Ingredients: chopped mushrooms, marinated green olives, shaved parmesean,
low-fat mozzarella, Italian seasoning, garlic powder, lemon juice, two tbsp homemade sauce, a drizzle of olive oil and pinch of salt.

Eggplant Discs
(Inspired by Kristen @ Behold the Metatron)
Her NYC vegetarian dishes have big city style.
Ingredients: Eggplant, drizzle of olive oil, garlic powder, salt, Italian seasoning, homemade sauce, shaved parm, and a squirt of fresh lemon juice.

Fried Green Tomatos

Our Little Container Garden


Condo living in South Florida, has it's advantages and disadvantages
in regards to maintaining a garden.
But I do what I can...
I bought my little tomato plants about six weeks ago,
and they were only a couple inches tall,
now, how these babies have flourished!
Which makes tomato season early for me.
My neighbor and I share this little community garden by our pool.

Growing in Our Garden:
cherry tomatos
beefsteak tomatos
chili peppers
basil
rosemary
&
one lime tree

One of my favorite Southern summer treats
 is Fried Green Tomatos...
though I tend not to deep fry
anything in my kitchen,
here is a simple and slightly healthier recipe.


Fried Green Tomatos
Serves: 2-4

1-2 green tomatos
1 egg
1/2 -3/4 cup of self-rising corn flour
3 tbsp vegetable, canola, or light olive oil

Slice tomatos about a 1/3 of an inch thick.
Dip each slice in beaten egg,
the dredge in cornmeal flour,
coating both sides.
Once oil is heated
on medium to medium-high in skillet or fry pan,
fit tomatoes in and cook to desired texture.
(I prefer them a little al dente, with the breading just beginning to crisp.)

I've recently re-discovered Sunset magazine. It's been years since I've flipped through one of those old magazines, and now I've made Sunset my default browser after falling in love with their succulent wall art and revamped outdoor sheds.
